the degenerative and chronic diseases that affect our societies nowadays.
- Whole grains provide us with stable energy which will
keep us going through the day without the up and downs that simple
carbohydrates cause in our body and emotions
- They are made up by a wide variety of nutrients and
combine well with other foods of animal origin.

make up 30- 50% of the daily food intake in a macrobiotic diet.

Quinoa, pumpkin and mushroom cake
Ingredients
A piece of pumpkin
two mushrooms
Half cup of quinoa
Cold pressed sunflower oil
miso
soyu
Rice vinegar
Green leaves
Preparation
Boil the quinoa. Stew the pumpkin. Sautée the mushrooms and mix them with the pumpkin. Using a cooking ring, make the base of the cake with a layer of quinoa. Place a second layer with the pumpkin and mushroom mixture. Place a second layer layer of quinoa and end up with a second layer of the pumpkin and mushroom mixture. Make a vinagrette with the oil, the miso, the soyu and the rice vinegar and put it on top of the cake. Serve with some green leaves, rocket for instance, decorating the plate.
